This overloaded potato soup is absolutely an orderly recipe and something new and smooth copycat spot on. I tried it several times, and every time it became clean and clear with mashed potatoes, slices of bacon, cheddar, creams, milk, and some flavourful seasonings. Altogether gets perfectly incorporated and turns into delicious chunks of cheddar and mashed potatoes.

how to make Longhorn Potato Soup

  • Cook the bacon: Cut some fresh bacon pieces small. Place them in a preheated large pan with a little oil. Fry the bacon finely until they turn crispy and browned textured. After 5 minutes, remove them onto a paper-lined bowl and set them aside for the next steps.
    Cook the bacon
  • Prepare onion and garlic: Chop the onions and garlic. Add 2 tsp of butter into the same pan and pour the chopped onions and garlic until it gets creamy, fragrances crispy, and brown-colored. It takes almost 30 seconds.

  • Add flour: Add some flour directly over the onion pastes and stir thoroughly until it gets a creamy texture. These textures give the soup a smooth form of buttery cream.add flour
  • Allow the potatoes and broth: I used the gold potatoes. You can use any kind of potato. Dice them into small square pieces. Allow them into the pan along with the chicken broth. Stir for a few minutes.

  • Add other liquids: After adding 4 cups of chicken broth,  add 2 cups of whole milk and ⅔  cup of heavy cream. Stir them well. If needed add ½  cup of warm water.
    Add other liquids
  • Sprinkle the seasonings: If you want to get some spicy sour cream soup, sprinkle some fresh seasonings along with the flavourful pepper, 1/4 ancho chili powder, 1 tsp of salt, and 1 tsp of sugar. This ancho chili powder adds mild smoky flavors.
    Sprinkle seasonings
  • Bring to boil and check: Now, keep boiling over the potatoes and after 10 to 15 minutes, check the tenderness of the potatoes by piercing through with a fork.
     Bring boil and check
  • Puree until smooth: Next, reduce the heat and keep simmering. Remove the half pan of boiled water and puree the potatoes using an immersion blender.
     puree untill smooth
  • Add sour cream and bacon pieces: Now, add 2/3 cup of sour cream and fried bacon. Saute them finely. Simmer for 15 minutes more.
Add sour cream and bacon pieces
  • Garnish: After 15 minutes,  transfer the soup into a serving bowl. Garnish with additional bacon, grated cheddar cheese, sour cream, and chopped capsicums with a little chile powder as delicious toppings.
