Ingredients

  • 4 Chicken leg quarters

  • 3 tbsps Green seasoning

  • 4 pimento grains crushed

  • 1 tbsp finely minced ginger

  • 1/4 tsp minced scotch bonnet

  • 2-1/2 tsp all-purpose seasoning 

  • 1/2 tsp black pepper

  • 1 tbsp soy sauce

  • 1/4 – 1/2 tsp browning

  • Ingredients for the sauce:
  • 2 tsp  of canola oil

  • 1 small onion

  • 2 tsp minced garlic 

  • 1 tsp ginger slices

  • 3 sprigs thyme

  • 2 tbsps of tomato ketchup 

  • 1/2 – 1 tbsp Brown sugar

  • 1/4 cup soy sauce

  • 1/2 – 1 cup water and slurry

  • Season and marinate the chicken: At first clean and pat the chicken pieces with a dry cloth to dry them. Ensure that you have removed the water for proper seasoning. Add all the seasoning ingredients for the chicken legs to the bowl. As you add the marinating ingredients, you must check their measurements properly. 
    After seasoning the chicken legs, marinate them in the refrigerator for a couple of hours. It will help the spices reach deep inside the meaty parts.

  • Bake the chickens: After marinating the chickens for a few hours, you will have to bake the chickens. This is the first step of Jamaican chicken baking. For proper baking, place the marinated chicken pieces in a casserole dish for even heat distribution. 
    Before putting the casserole dish into the oven for baking, wrap it with oven-safe wrapping paper. You may even oven-bake the chickens without the wrapper. You will have to bake the chickens for 25 minutes at 355°F for better taste.

  • Start preparing the sauce: As the chicken bakes in the oven, you must prepare the sauce. Remember that the sauce is the base of Jamaican baked chicken. So, you have to prepare it carefully. At first, add thyme, ginger, garlic, and onion to the cooking pan. 
    After cooking it for 2 to 3 minutes, you must proceed to the next step.

  • Add soy sauce and tomato ketchup: Add soy sauce with the spices and stir the mixture for another couple of minutes. Then, add the tomato ketchup to bring the perfect saucy feel. It will help if you continue stirring the mixture in medium heat to help the ingredients blend perfectly.

  •  Add water and brown sugar: When the mixture starts thickening, you must add water to it. After that, you should add brown sugar with the spice and tomato ketchup mixture. The brown sugar will bring a mild sweetness to the sauce. When you apply it to the chickens, it will, too, become slightly sweet.

  • Add other ingredients and continue cooking: It is the final step in making the sauce for the Jamaican baked chicken recipe. Add black pepper and scallion as the spices, tomato ketchup, and soy sauce mixture start boiling. The spring onion will add a nice early flavor to the sauce. 
    You need to continue cooking it on medium heat until it thickens. Adding the slurry (water and cornstarch mixture) will thicken the mixture. Remove it from the stove when it gets thickened and gets a saucy look. Finally, allow it to cool down.
