Ingredients

  • 4 eggs

  • 1 ⅔ brown sugar

  • 1 can pumpkin (15 ounces or 425 grams)

  • ⅔ cup cooking oil or vegetable oil

  • 2 teaspoons vanilla essence or fruit essence

  • Wheat or all-purpose flour

  • 2 teaspoon baking soda

  • ½  teaspoon baking powder

  • ½ teaspoon ground cloves

  • ½ cup mix chopped nut

  • ½ cup raisins

  • 1 teaspoon salt

  • 1/4 tsp nutmeg

  • 1 tablespoon cornflour ( optional)

  • Preheat the Oven and Grease the Pan:
    Put the oven to 180 degrees for 15 minutes to preheat it before you start preparing the bread mixture. Or you can preheat it to 350 degrees for 5-8 minutes. Also, don’t forget to grease the loaf pan with oil or butter.

    Keeping the egg yolk aside, beat the egg white and half of the sugar in an electric beater.   If you don’t have an electric beater, no problem; use a hand whisk at high speed. Then add the rest half of the sugar and whisk for another 2 minutes. Finally,  add the egg yolk and give it a good mix.

    Then, add the pumpkin puree or cane pumpkin, vanilla essence, and oil into the mixing bowl. If you want to retain a good fruit flavor, you can use fruit essence instead of vanilla essence.

    Next, add the dry ingredients one by one. Start with wheat flour or all-purpose flour, whatever you have. Add gradually, don’t just throw at once. Then salt, nutmeg, baking soda, baking powder, and ground cinnamon powder. Lastly, a little cornflour for excellent binding. Then mix and make a smooth bread batter.

    Now add all the dry fruits ( raisins, chopped nuts) and ground cloves.
