Ingredients

  • 3 chicken breast

  • 2 tablespoons oil

  • ½ cup green apple

  • ½ cup lettuce

  • 3 celery stalks

  • ½  cup green onion

  • ¼ cup red onion

  • 2 tablespoon parsley 

  • ½ cup almonds

  • ½ cup raisins or dried cranberries

  • 4 tablespoon low-fat mayonnaise

  • 1 tablespoon low-fat greek yogurt

  • 2tabespoon lemon juice

  • 1tabespoon dijon mustard

  • 2 tablespoon oil

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • ½  teaspoon black pepper

  • Salt as per taste

how to make Publix Chicken Salad

  •  Marinate The Chicken: Take a mixing bowl, and add garlic powder, dried oregano, paprika, black pepper, and salt as per taste and whisk everything to mix properly. Now add the chicken breast and coat well with this spice mix-up. Then leave it refrigerator for marination for 40-60 minutes. If you don’t have time for marination, leave it for 5 minutes while preparing other things.

  •  Cut The Vegetables: While chicken is on marination, let’s ready vegetables. Take everything in a strainer and wash well, then dry with a paper towel. Now take the chopping board and knife and cut each vegetable to the same size. There is no pursuing everything should be perfect, it’s just for a good presentation.

  • Fry The Chicken: Turn on the stove, put a frying pan on it, add 2 tablespoons of oil, and set the heat at medium-low. Let the oil heat up a little and then add the chicken. Fry it for 4-5 minutes until golden brown, then flip and fry the other side for another 4-5 minutes. Once done, remove it from the pan and keep it aside for cooling down.

  •  Cut The Chicken: Take the chopping board and knife again, keep the chicken breast on top of the chopping board, and cut all the three pieces into slices and then small pieces.  If you want to keep the chicken larger, I mean slices, you can do so. Cutting them into pieces was for matching with the small pieces of vegetables. So it looks good together.

  •  Make The Sauce: Take a small mixing bowl, add 4 tablespoons mayonnaise, 1 tablespoon greek yogurt, 2 tablespoons lemon juice, 1tablespoon dijon mustard, ½ teaspoon black pepper, and salt as per taste. Now whisk everything to mix properly.

  • Mix Everything: Take a larger mixing bowl, add the chopped chicken, 3 chopped celery, ½ cup green onion, ¼ cup red onion, ½ cup green apple, ½ cup lettuce, 2tablespoon parsley ½ cup almonds, and ½ cup raisins or dried cranberries. Now give it a good mix. Then add the sauce we just made in step five and toss everything to mix together.

  •  Serve: Take serving plates and put some salad ( as per need) garnished with some chopped spring onion on top. The quantity of salad we made above can be served to 4-6 people easily. If you can’t finish it in one day, no worries, you can store it in the refrigerator for up to 7 days.
