Ingredients

  • 14 oz pasta

  • 4 cups of milk

  • 1 cup of cheddar cheese

  • ¾ cup of gruyere cheese

  • ¾ cup of mozzarella cheese

  • 4 tablespoons of butter

  • 4 tablespoons of flour

  • ¼  teaspoon of black pepper

  • ¼ teaspoon of nutmeg

  • 2 teaspoons of salt

  • Mix Cheese: Take a large mixing bowl, and add 1 cup of grated cheddar cheese, ¾ cup of grated gruyere cheese, and ¾ cup of grated mozzarella cheese. With a spoon, give it a good mix and keep aside.

  •  Boil The Pasta: Turn on the stove and put a large pot, and fill  ⅓  with water. Keep the flame on high and bring it to a boil. Add 1 teaspoon of salt, give it a stir and add 14 oz of pasta to it. Cook until the pasta is soft or thoroughly cooked. It will take 8-10 minutes. Once cooked, place the pasta on a strainer, drain the excess water and keep it aside.

  • Make The Sauce: Meanwhile, the pasta is cooking, turn on another stove, and let’s make the sauce. Put another saucepan on the stove, and set the heat at low. Add 4 tablespoons of butter and let it melt. Once melted, add 4 tablespoons of flour and increase the heat to medium-low. Whisk to mix the flour and butter to make a sauce and cook for 2 minutes.

  •  Add Milk: Once you get a smooth butter and flour sauce, it’s time to add milk. Pour normal temperature 4 cups of milk. But not at once, add little by little; first, add 2 cups of milk, whisk to mix, then rest of the 2 cups again. Cook until the sauce gets thick and smooth. It will take 5-8 minutes to get a smooth thick sauce.

  • Add Spices: Once the sauce is well cooked, remove it from the stove. Add 1 teaspoon of salt, ¼ teaspoon of black pepper, and ¼ teaspoon of grated nutmeg. Use the hand whisk and whisk until everything is well mixed.

  • Add Mixed Cheese: Divide the cheese and keep ¾  of it to mix in the sauce and rest aside for later use. Add the mixed cheese gradually first, add ⅓ of it, stir and mix, then half of the rest, and finally all the ¾ of the cheese. Whisk until the cheese is mixed with the sauce.

  • Add Pasta: Now, take the drained pasta we kept aside and add them to the sauce. Again, add and mix gradually, don’t put all the pasta at once. Add little by little and mix. Use a wooden spoon to mix the pasta; if you use a whisker or don’t do it gently, the pasta will break down.

  • Assemble: Mixing is done, but it’s not ready yet. Take a baking dish, and pour all the mixed pasta and sauce. Use a spatula and spread well. Now take the mixed cheese we have kept aside for later use. Spread all the cheese all over the pasta and ensure it spreads everywhere.

  • Bake The Pasta: Wear your oven gloves, take the baking dish and place it inside the oven. Set the heat to 380 degrees F and bake for 20 minutes. You shouldn’t wait blindly until 20-25 minutes pass; if the cheese is melted and the pasta has turned golden and bubbly, you can take it out before 20 minutes, or if not, wait for extra 5 minutes.

  • Serve: The pasta is ready to serve; take it out, leave it on a cooling rack if you want, or serve hot. Take your serving bowl, use the spoon and serve as your need. Sprinkle some grated cheese if you want to garnish it.
