By doing this you will get a smooth texture batter without any lumps. Then cover the bowl with plastic wrap and keep them inside the refrigerator for 1 hour.

Notes

  • Use cold heavy cream to whip the cream. Because cold whip cream is easy to whip up, and cold cream can hold its shape while frosting.
  • Avoid using bread flour and plain/all-purpose flour for making this crepe cake. Because this flour will make your cake rubbery. Only use cake flour for this crepe cake recipe.
  • Don’t over-mix or over stir the cake batter, otherwise, your cake batter will get a rubbery texture.
  • Don’t overheat the pan, too hot a pan will end up your crepe too fast and you will not swirl the batter into a thin layer.
  • Make sure to remove the air pockets of the plastic wrap that you place on the top of the shallow dish.

Use good quality matcha powder – To make a perfect matcha crepe cake try to use a high-quality matcha powder.

Rest the cake batter – Make sure to keep the batter rest for a few hours because it allows the gluten to relax. If you don’t rest the batter for a long time your crepe will be rubbery due to gluten development.

Heat the pan on low heat – To avoid hot spots on the pan, try to heat your frying pan on low heat.

Use two frying pans – To make a perfectly round crepe cake you need to make a large crepe for the top layer of the crepe cake. A large crepe will help to wrap the outer edge of the crepe cake. So use two frying pans one larger than the others for making the different shapes of crepe.

No, I don’t like to recommend freezing a crepe cake. Because crepes are very thin so they will dry out quickly in the freezer or fridge. So if you keep the cake inside the fridge for too long, the texture of the cake will change.

How to make thinner crepes?

Strain your crepe batter with a fine-meshed sieve. By doing this no large chunks will exist in the batter. Large chunks will make your crepe lumpy or thick.

For taking the perfect amount of batter using a measuring cup for making each crepe. A perfect amount of batter will give your crepe a perfectly consistent thickness. To give the same thickness throughout the crepe you need to swirl the pan slowly.

How long does crepe cake last?

Matcha crepe cake will last for up to 2 to 3 days if you store them in an airtight container in the fridge.
