You can make the scrumptious potato salad in simple ways. Thus, you can prepare it by peeling some potatoes and boiling them in water containing salts. Then, you can slice and place these potatoes on your serving dish. You can add a mixture of onion (chopped), some mayo, salt, and pepper for seasoning.


  • Large size potatoes (4 pieces)

  • Chopped onion (2/3 cups)

  • Vegan mayonnaise (1 cup)

  • Celery ribs (4 pieces)

  • Carrot (1 medium size)

  • Frozen peas (½ cup)

  • A tablespoon

Steps-How to Make Juan Pollo Potato Salad Recipe

  • Arrange the ingredients: You should arrange all the ingredients and tools first. Wash the potatoes properly.Arrange the ingredients
  •  Cut the potatoes: You can peel the potatoes if you want. But I have cut them into bite-size pieces without peeling the skin. For cutting purposes, you can use a knife and cutting board.

  • Steam the cut potatoes: After cutting the potatoes, you can turn on the stove and start steaming them for 10-15 minutes. You can use the knife to check if they are boiled enough or ready to eat.Steam the cut potatoes
  • Cut the vegetables: During the steam, you can cut the celery, carrot, parsley, and onion to use in further steps. It is better to keep them in small sizes as you use them in preparing noodles.Cut the vegetables
  •  Combine the vegetables: Once you have cut the vegetables, combine them with peas in the large bowl.

  • Check if the potatoes are ready: After checking with the knife, you can turn off the stove and let the boiled potato be cool for a couple of minutes.Check if the potatoes are ready
  • Prepare the dressing: Take the small bowl and combine mayonnaise, salts, and pepper.

  •  Mince the garlic: Use a knife or mincing tool to mince the garlic cloves. Then, add the minced garlic to the dressing and stir all the ingredients well.

  • Add the potatoes to vegetables: Once the potatoes are cooled down, add them to vegetable items.

  • Mix the dressing: Mix all the vegetables and potato mix thoroughly.

  •  Add herbs: Take the parsley to the mixture and start stirring again. Then, the salad is ready.

  • Before you serve, you can chill the salad for several hours as I did it. One more thing, the prepared salad can stay fresh for the next 3-5 days if you preserve it in a refrigerator.
