Ingredients for the flounder recipe

  • 6 fillets of flounder (total 1-3/4 pounds)

  • 1 cup of all-purpose flour

  • Kosher salt

  • Black pepper (Freshly ground) 

  • 2 to 3 large eggs

  • 1-1/4 cups bread crumbs (Seasoned)

  • 3-4 cubes of  unsalted butter

  • 2tbsps of  olive oil 

  • 6 ounces arugula

  • 1/4 cup of lemon juice

  • Prepare the oven: The recipe will need both cooking and baking the flounder fillets. Thus, you need to preheat the oven. You should set the oven at 250°F for preheating it for 2 to 3 minutes. Also, position the sheet pan inside the oven carefully.

  • Dry the fish fillets: In a large pan, spread the cleaned flounder fish fillets. Now, you must dry the fillets using a paper towel. Ensure that you have dried the fillets on both sides properly.

  • Whisk the eggs: Now, take a small bowl. Pour in the eggs there as you break the shell. Continue whisking them for a couple of seconds. Also, use water, so the eggs don’t become foamy as you use with cakes. It should be thin.

  •  Season the flour and prepare bread crumbs: Take another bowl and pour in all the flour in it. Also, add 2tbsps of slat and 1 teaspoon of black pepper. Now, combine these three ingredients carefully. Be careful not to leave any lumps in the flour mixture. 
    On a separate plate, keep your breadcrumbs ready. You will need to dip the fillets in it.

  •  Preparing the flounder fillets for cooking: Once you have accurately set all the seasoned ingredients, you are ready to prepare the fillets. At first, dredge the fillets in the seasoned flour accurately. Then, remove the excess flour mixture from the fillet as you dip it in the whipped egg. 
    Finally, dredge the flounder fish fillet in the breadcrumbs.

  •  heat olive oil and butter: Place the cooking sauté pan on your stove. As it heats up, add the butter and olive oil to it. You don’t need to heat all the butter at a time. Instead, continue heating the butter as you cook the fillets one by one. You must heat and melt the butter properly without burning it.

  •  Cook and oven bake the fillets: When the butter melts, place two fillets in the sauté pan at a time. Observe the fillets properly and turn them over multiple times to cook evenly. You need to cook each side of the fillets for 2 to 3 minutes in medium heat. 
    After cooking the fillets, transfer them to the preheated oven. There bake the cooked flounder fillets for 5 to 7 minutes. Don’t forget to turn the fillet’s sides.

  •  Prepare the lemon vinaigrette: Take a measuring cup and mix the olive oil, salt, black pepper, and lemon juice. Whisk the mixture until it softens. As you check the salad, you may need to add more lemon juice.
