Ingredients Brownie Cake

  • ¼ cup of cake flour

  • 6 large eggs

  • ½ cup sugar

  • 180-gram butter

  • 300-gram bittersweet chocolate

  • 1 teaspoon of baking powder

  • Ganache
  • 1 cup bittersweet chocolate

  • 1 cup half/half

  • Chocolate mousse
  • 200-ml milk

  • 8 egg yolk

  • 90-gram sugar

  • 210-gram bittersweet chocolate

  • 420-gram heavy cream

  • ½ teaspoon vanilla essence

  • ⅔ teaspoon gelatin sheet

  • Make The Cake Batter: Melt butter and chocolate on the heat of boiling water. Once it’s melted, keep it aside. Now take a cake mixer, add the eggs and beat until it turns smooth. Then add the sugar and beat again to mix with the eggs. Add the melted butter and chocolate and keep the machine on when done. Then strain and add cake flour and baking powder. Keep mixing until everything is mixed well and you get a soft, smooth cake batter.

  • Ready The Cake Batter: The amount of batter we made is enough to bake 2 cakes. Take a cake mold, line it with parchment paper, and grease it with melted butter. Pour the cake batter on the mold and give it a shake. Then use a spatula to spread the cake batter finely.

  • Bake The Cake: Wear gloves and put the baking tray with the cake batter in the preheated oven ( 375 degrees for 15 minutes) and bake the cake for 15 minutes at 180degree. Once time is up, take a toothpick or wooden stick, insert it into the cake and check if it’s well cooked or not. If the toothpick comes clean, means it’s well cooked, and if not, bake the cake for another five minutes.

  • Keep The Cake In Fridge: Take out the cake and let it chill for a few minutes. Once it has cooled down, keep it in the refrigerator.

  • Make the ganache: Just like we melted butter and chocolate, now we will make the ganache. First, melt 1 cup bittersweet chocolate, then add 1 cup half/half and keep stirring until both are well mixed and turn into a smooth ganache.

  •  Melt The Gelatin: Take some cold water in a mixing bowl, add ⅔ teaspoon gelatin sheet, and wait until it softens. Then drain the water and keep it aside.

  • Blend The Heavy Cream: Take the cake blender, add the heavy cream, and blend until it turns soft.

  • Make The Mousse: Melt the bittersweet chocolate and keep it aside. Now put a pan on the stove, set the heat at medium-low, add the milk, vanilla essence, and sugar, and mix until everything is dissolved properly. Take the egg yolk and whisk until it turns soft and add into the milk. Bring it to a boil and simmer for a few minutes. Turn off the stove, and let the mixture chill for a few minutes. Then add the gelatin and melted chocolate and whisk well to mix. Add the whipping cream little by little and keep mixing.

  • Assemble the Lisbon Chocolate cake: Take a cake ring; use a cake parchment paper to unmold the cake easily. Put the brownie cake inside it, spread a layer of ganache and cover the cake finely with it. Give it a shake and add the chocolate mousse. Give it another shake and put it in the refrigerator, and leave it to chill for a minimum of 4 hours.
