Ingredients  for Empanadas Dough 

  • 3 ¾ cup all-purpose flour

  • 1 tbsp sugar

  • 1 tbsp kosher salt

  • 12 tbsp cold butter

  • 1 ¼ cup cold water

  • 2 eggs lightly beaten (optional)

  • ¼ cup milk (optional)

  • 2 tbsp vegetable oil (optional)

  • ¼ cup vegetable shortening (optional)

  • 2 tbsp oil

  • 4 minced garlic cloves

  • 2 lbs lean ground beef

  • 2 small bell peppers (chopped)

  • 1 Anaheim pepper (chopped)

  • 1 small onion (chopped)

  • 2 tsp Mexican oregano

  • 2 tsp thyme

  • 2 tsp parsley

  • 2 tsp basil

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp black pepper

  • 1 to 2 tsp crushed red pepper

  • 2 tsp salt

  • 1 cup medium cheddar cheese 

  • 1 cup Monterey Jack cheese

  • 1 cup Oaxaca cheese

  • 1 tsp curry powder (optional)

  • 2 tsp chicken broth (optional)

  • ½ tsp lime juice (optional)

  • 1/8 ground cayenne pepper (optional)

  • ¼ cup julienned carrot (optional)

  • ¼ cup russet potato (optional)

  • 1 can petite diced tomatoes

  • 1 ¼ lbs ripe roma tomatos

  • 1/3 cup chopped red onion 

  • 2 green chopped onions

  • 1/3 cup fresh cilantro

  • 1 jalapeno pepper (seeded and roughly chopped)

  • 2 tbsp fresh lime juice

  • ½ tsp chili powder

  • 1 large clove garlic (finely chopped)

  • ¼ tsp ground cumin

  • Salt and pepper to taste

  • ½ tsp granulated sugar (optional)

  • 1 cup sour cream

  • ¼ cup finely diced tomato

  • 1 tbsp finely chopped red onion

  • 1 tbsp red bell pepper

  • 1 tbsp finely chopped cilantro

  • ¼ tbsp salt

  • ¼ tsp ground cayenne pepper

  • 1 pinch ground cumin

  • Make the ground beef stuffing: Place a large pan on the stove and turn on the stove to medium-high heat. You can also use any pot with a wide bottom. First, add a little oil and wait for the oil to heat up. Then gradually add two small bell peppers, 1 Anaheim pepper, and one small onion. Cook them for ½ minutes. Then add all other ingredients like four minced garlic cloves, 2 tsp Mexican oregano, 2 tsp thyme, 2 tsp parsley, 2 tsp basil, 2 tsp paprika, 1 to 2 tsp crushed red pepper, 1 tsp garlic powder, 1 tsp black pepper, and 2 tsp salt. After adding all the ingredients, cook them for 8 minutes.

  •  Make empanada dough: Now, you need to make the dough. So, take a large bowl out and add 3 ¾ cups all-purpose flour, 12 tbsp cold butter, 1 tbsp sugar, 1 tbsp kosher salt, and 1 ¼ cup cold water. You may knead the flour until it no longer sticks to your hand. Keep rest the dough for 5 minutes. In this empanada dough recipe, you can add milk and egg to make it healthier.
