Notes

  • Try to remove as much water as possible from the Spinach. Use your hands to squeeze out as much liquid as possible. Over wise, your pies will get soggy inside the oven. Try to make the Spinach filling one day before in advance. This long time will help incorporate the flavor well and soften the Spinach.
  • Usually, the shape of your dough may change if you transfer the dough from one place to other. Try to make your fatayer in the baking dish.
  • How long does spinach pie last? As this recipe is plant-based, it will last 6 to 7 days in the fridge. Make sure you store this pie in an airtight container. Keeping them in the refrigerator allows you to enjoy this fatayer with friends and family all week.
  • You can use lemon zest or lemon pepper seasoning instead of sumac.
