Making cassava pone is simple. Some of us make cassava like a cake, but that’s not true. In pone making, you don’t have to put so much effort into mixing the ingredients and make a smooth batter. Just mix the ingredients and bake them for the perfect time. But don’t think it’s simple and you can do it very easily.

You have to keep patience and follow each instruction I will provide below. To enjoy the best cassava pone, you must pay attention to every little detail. As a result, you get a soft and savory cassava pone.

Ingredients

  • 2 cups cassava (grated)

  • 2 cups coconut (grated)

  • 1/2 cup sugar

  • 2 tablespoons unsalted butter (melted)

  • 1 tablespoon ginger (grated)

  • 1 can evaporate milk

  • 1 teaspoon vanilla essence

  • 1 teaspoon nutmeg (grated)

  • 1 teaspoon cinnamon powder 

  • 1/2 teaspoon black pepper 

  • 1/4 teaspoon salt (as per need)

how to make Guyanese Cassava Pone

  • Preparation: While taking preparation, first put the oven at 360 degrees for 15 minutes to preheat and let’s start the preparation. Take some cassava, grate them and keep aside 2 cups of them in a separate bowl. Then grate a coconut and keep aside 2 cups of it in separate bowls. We also need to grate some spices like nutmeg and ginger. Grate, and keep aside 1 tablespoon of ginger and 1 teaspoon of nutmeg in separate bowls. Measure and keep other ingredients as we mentioned above, and we are ready to start.
    Preparation
  • Mix Dry Ingredients: Take the large mixing bowl, add the grated cassava, coconut, and sugar, and give it a good mix.

  • Add Liquid Ingredients: Pour the 1 can evaporate milk, 1 teaspoon of vanilla essence, and 2 tablespoons of melted butter, and stir to combine well.

  • Add Spices: Everything is done; now add the spices, and the Guyanese cassava pone will be ready to bake. Add 1 tablespoon grated ginger, 1 teaspoon grated nutmeg, 1 teaspoon cinnamon powder, 1/2 teaspoon black pepper, and 1/4 teaspoon salt or as per need. Whisk until you get a smooth batter.

  •  Bake The Cassava Pone: Batter is ready; now pour it into a baking pan; if you use a nonstick baking pan, like me, then you don’t need to grease it. Just pour, give it a shake or spread with a spatula  and bake. Put the baking tray in the preheated oven, set the heat at 180 degrees, and bake for 45 minutes. Once time is up, insert a toothpick in the pone; if it comes clean, it means it’s properly cooked, and if not, then bake for another 5 minutes.

  • Serve: Take out the cake, let it chill for a few minutes, cut the pone into pieces and serve as per need with a cup of coffee or tea for added refreshment. You can put some butter on top of it for garnishing and enjoy!

How To Store Guyanese Cassava Pone

If you want to enjoy the fresh taste of cassava pone for a long time, you can do that. Once the pone has cooled down, cut them into pieces, and keep them inside an airtight container. Now place the container in your kitchen drawer or inside of your kitchen cabinet. Because to retain the freshness you have to avoid air, so a tightly sealed air container. 

And you also have to avoid warm places, so some of us who just leave our bread or any baking item on top of the countertop, note this. Warm places or air help mold grow in bread, buns, and cakes, so keep it in mind. This way you can enjoy fresh cassava pone for up to 2 days.

Store For Long-Time 

To store for more days, you just have to keep the airtight container in the refrigerator. In the refrigerator, you can store cassava pone for up to 5 days. Plus, if you want to freeze the cassava pone that is also possible. Transfer the cassava pone to a ziplock bag, and leave it in the fridge. 

Reheat

Whenever you want to eat just take it out thaw it overnight or for 3-4 hours and enjoy. If you want to reheat, use a microwave or toaster. I use a toaster, it gives quick result. In fridge cassava pone can be stored for upto 2 months. 

Tips and Tricks

  • If you want you can smash the cassava or use cassava flour to make this pone. I prefer grated cassava because grated tastes better and retain its health beneifts. Grated cassava has fresh vibes. 
  • If you are sticking to your diet, avoid using sugar and add honey or maple syrup. Or if you are okay without any sweetness just skip adding sweetener, it aslo taste delicious. 
  • I was out of evaporated milk so once I tried it with coconut milk, and trust me it was amazing. But it tastes more like coconut pone than cassava pone. If you want to make it a little different you can do it, using coconut milk.
  • It’s not recommended to add any raisins or dry fruits in cassava pone, they just don’t go well with cassava, you know cassava is kind of veggy. 
  • Cassava pone will be soft like cake, and as most of the ingredients are used grated, so you can feel it with your hand. I am saying about baking. When checking the phone (baked or not), keep in mind this, if the pone is well baked, still you will find the pone a little sticky in your hand, so use your mind.
