Ingredients

  • 2 ¼  pounds of fresh leaf spinach

  • 1 cup of mozzarella cheese

  • 4 ounces of cream cheese

  • ½ cup of grated Parmesan cheese 

  • 4 tablespoons of unsalted butter

  • ¼ cup of all-purpose flour

  • 3 ½  cups half-and-half

  • 1 minced onion 

  • 3 minced garlic cloves 

  • ½  teaspoon of freshly grated nutmeg 

  • 1 teaspoon of grounded black pepper

  • 4 teaspoons of Kosher salt

how to make Morton’s Creamed Cpinach

  • Boil The Water: Our first step in making the creamed spinach will be preparing the spinach to cook in cream. Turn on the stove, and put a large saucepan or pot filled with ¾ of water. Add 2 teaspoons of kosher salt and wait until the water comes to a boil. 
  • Wilt The Spinach: Meantime wash the spinach and add it to the boiled water when it’s simmering. It’s like add and remove, yes, you don’t have to thoroughly cook the spinach. Just give it a stir and cook for 1 minute until the spinach is wilted.

  • Ready The Spinach: Then use a strainer and drain the wilted spinach. Wash them with cold water, and drain excess water. Take some spinach in your hand, make a bundle, and cut them into ¾ inch width. Repeat this until all the spinach is chopped. Place them in a bowl and keep them aside.

  • Cook The Seasoning: In a large skillet, add four tablespoons of unsalted butter; you don’t have to wait until the butter melts. Just after adding the butter, add minced garlic and onion and saute until the onion is translucent.  It will take 8-10 minutes.

  • Add spices: The butter is melted, and the seasoning is also ready; now it’s time to add the spices. Let’s add two teaspoons of kosher salt, ½ teaspoon of grated nutmeg, and one teaspoon of grounded black pepper. Give it a stir and cook for a minute.

  • Add Flour: Now, lower the heat, add ¼ cup of all-purpose flour, and stir with a wooden spoon. Cook for 2 minutes until you get a good nutty fragrant.

  • Add Half and Half.: Next, add 3 ½  cups half-and-half, give it a good mix and cook until it boils.

  •  Add Cheese and Cook: It’s time to make the creme cheesy and smooth. Add 1 cup of grated mozzarella cheese and cubed creme cheese. Give it a good mix and cook for 5-6 minutes or until the cheese melts and the creme gets thickened and smooth enough.

  • Add Spinach And Parmesan Cheese: The creme is ready; now we have to add the chopped spinach. Take the spinach and add it little by little and give it a good mix with a gentle hand. Finally, add the grated parmesan, a good mix with a wooden spoon, and it’s done. You don’t need to cook for a minute, just a good mix.

  • Serve and Store: Remove the skillet from the stove and serve the creme spinach hot or cold as you like.  But don’t serve them once 2-hour pass. Put some cheese slices in yop of the spinach if you want to garnish. 
    If some leftovers are there, store them in the refrigerator for up to four days by keeping them in an airtight bag or container. And if you want to store them for a long time, keep them in the freezer, and they will be ready to eat for upto four months.
