Ingredients

  • 1 lbs of American cheese

  • 2 cups of milk

  • 4 tablespoons of flour

  • 1 stick of butter

  • 1 teaspoon of paprika

  • 1 teaspoon of hot pepper sauce

  • 1 teaspoon of cayenne pepper 

  • 1 teaspoon of ground cumin

  • 1 teaspoon of garlic powder

  • 1 teaspoon of chili powder

  • ½ teaspoon of dry mustard

  • ¼  teaspoon of salt

how to make Mexico Chiquito Cheese Dip

  • Mix Butter And Flour: Turn on the stove and set it on low, medium heat. Add 1 full stick of butter and wait until it melts or is dissolved, don’t burn it. Now add 4 tablespoons of flour, increase the heat to medium-low and keep stirring continuously not to make a dark roux. It won’t take a long time, 2 minutes is enough to incorporate the flour with the butter.

  • Add Spices: Now the butter and flour are well mixed and turned into a thick sauce, it’s time to add the spices. Add all the spices one by one. Start with 1 teaspoon of paprika, 1 teaspoon of chili powder, 1 teaspoon of cayenne pepper, 1 teaspoon of garlic powder, ½ teaspoon of dry mustard seeds, and ¼ teaspoon of salt. Continue stirring and mix everything.

  • Add Milk: It’s all brown, and right time to add the milk. Add ½ cup of milk, and keep stirring until mixed. Now pour the rest of the milk and continue stirring. Wait until it comes to a boil.

  • Add Sauce: It’s all creamy already; let’s make it a little spicy. Add one teaspoon of hot pepper sauce and stir it. Let it simmer for 5 minutes. Don’t forget to stir, not even frequent stir, but continue stirring.  Don’t leave the cheese dip unattended for a minute; just keep stirring all the time.

  • Add Cheese: Slice the cheese into several pieces; it will help to melt the cheese faster. Add some of the cheese, and stir until it melts. Increase the heat to medium, and then add some more cheese again and stir until it melts. Continue until all the cheese is added and mixed.

  1. Not the real Recipe !! I worked there for 15 years and this is not even close. Got the Original recipes when we took over in 1979 the Haynie company bought it out and I transferred into that store at Proto Junction. That is not the recipes that we use at that time for the 15 years I was there. Just saying.
