This dish doesn’t need lots of spices like desi-style butter chicken; only a few must spice, that’s why it’s called a Chinese dish. Making the Chinese peanut butter chicken was very easy, but I just couldn’t get in hand the perfect taste in the first few tries. Then I thought of doing some tricks, so I did a lot of research and experiment, and it worked.

Ingredients

  • 8 Chicken drumsticks

  • 4 tablespoons peanut butter 

  • 3 spring onions

  • 3 cloves garlic

  • 1cm ginger root

  • Handful  fresh coriander

  • 4 lime leaves

  • 1 teaspoon turmeric

  • 1 teaspoon chilli powder

  • 1 teaspoon paprika

  • 1 tablespoon sugar

  • 1-litre chicken stock

  • 2tablespoon of vegetable oil

  •  Preparation: Take the ginger and garlic, chop them and keep aside. Roughly chop the spring onions and coriander, and keep aside. Now take the chicken pieces and cut them into bike size pieces. Take half cup of peanut and grind them to make a smooth paste or use store bought peanut butter.

  • Fry The Seasoning: Turn on the stove, put a nonstick pan and set it on medium high flame. Now add 2 tablespoons of oil, let it heat, add the chopped garlic and ginger saute for a minute.

  • Add The Chicken: Add the chicken pieces and fry for 2 minutes. Make sure you have fried the chicken pieces on both sides, and don’t burn them, keep stirring and fry.

  • Add The Masala: It’s time to add the masala, turmeric, chilli powder, and paprika one by one. Give it a stir and combine with the chicken finely. Fry for another two minutes.

  • Add Peanut Butter: Next add the peanut butter, stir continually to mix with other ingredients. Stir continuously until oil leaves the chicken. Now add the chicken stock and stir to mix.

  •  Cook The Chicken: Cover and cook the chicken on medium heat until it simmer. Once it’s boiling, add the lime leaves, cover again and simmer for 20-25 minutes. Add salt and sugar as per taste, and cook for another five minutes. Remove the lime leaves and add the chopped onion springs and coriander. Cover and cook for a minute and turn off the stove.

  •  Serve: Take out the chicken and let it cool down. Transfer it into small bowls as per need and serve with rice, chapati or anything you want. You can sprinkle some fresh coriander for garnishing.

Tips And Tricks

  • Don’t skip or replace ginger root with ginger. Ginger root takes the peanut butter chicken to another level.
  • Don’t add too much masala than I have mentioned above and anything else that is not added to the ingredients list. Remember, it’s a Chinese dish that won’t be a spicy masala chicken but a sweet and savory chicken. 
  • You can use grated jaggery instead of sugar, or honey will also work, whatever you like. As it’s a Chinese dish, I love the jaggery flavor.
